Peach and Strawberry Crisp

Going peach picking or strawberry picking is a blast! It is something I do every Summer and I look forward to creating new recipes with all the fresh, organic, fruit I hand picked myself… Like my peach and strawberry crisp recipe, which is the perfect toss-in-the-oven recipe to have any time. I love the flavor combination of peaches and strawberries and they are both so good for you! 

I’m a big fan of making my crisp topping with rolled oats. They are a wonderful source of healthy carbs and fiber, and loaded with vitamins and antioxidants. Rolled oats also help sustain hunger so they are a great breakfast option or mid-day snack.

Peach and Strawberry Crisp

Ingredients:

  • 4 capsules of Just Thrive Probiotic
  • 3 cups sliced peaches
  • 1 cup of strawberries
  • 1 Tablespoon arrowroot powder or cornstarch
  • 1 Tablespoon fresh lemon juice
  • 1 cup old fashioned rolled oats
  • 1/2 cup almond flour
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions: 

  1. Preheat oven to 350° and spray an 8-inch baking dish with cooking spray.
  2. Add peaches and strawberries to the baking dish and combine with arrowroot, Just Thrive Probiotic, and lemon juice.
  3. In a medium bowl, stir together oats, almond flour, maple syrup, coconut oil, vanilla, cinnamon and salt.
  4. Cover the fruit with the oatmeal topping. Gently press the mixture down.
  5. Bake for 25 minutes or until fruit is bubbling and tender or until topping has hardened and turned golden brown.

Eat for a delicious breakfast, mid-day hunger sustaining snack or serve with ice cream or fresh whipped cream for dessert! It’s a recipe for anytime, anyday! I hope you love it!
